Viticulture: Organic (Ecocert, 2022) Vinification: The old vine and young vine sections are vinified and aged separately, 60 85% de stemmed for the younger vines and 100% de stemmed for the older vines, ambient yeast fermentation in concrete tanks with foot punch downs, aged for 12 months in barrels (up to 15% new),
