and still quite some residual scents from its spontaneous fermentation
2023 Tercet (Marc Soyard) Pommard 'En Boeuf', Cote de Beaune, France Sebastien Girost Sourced from sustainably farmed vineyardsOrganic. 100% Pinot Noir, purchased from Phillipe Pacalet from his parcel La Croix Blanche, a climat situated towards the East of Pommard on a thick layer of topsoil over alluvial sediments, clays, and gravel. The parcel is known to be particularly well draining. The fruit is fermented whole cluster and spontaneously fermented. Its then pressed into barrel ( used and new) and aged for 18 months. Bottled unfined, unfiltered and without additional SO2.
